The recipe for the best (vegan) chocolate cake in the world

3c flour (plain white works for me)
1- 2 c sugar
2/3 c cocoa
1 tsp salt
2? tsp cinnamon
2 tsp baking soda

-sift the flour and sift all of the dry ingredients together (sifting really helps!)

mix in any other dry ingredients you like (dried fruit; nuts;
coconut; lemon rind; choc chips...)

In a big jug mix up:
2 c cold water
1/2 c sunflower oil
2 tablespoons lemon juice/vinegar will do if you have no lemons
2 tsp vanilla (if you have it)

pour the wet stuff into the bowl of dry stuff
mix well

The batter should be fairly pourable so you might want to add more liquid.

pour straight into tin lined with greaseproof paper
bake 20-40 mins - depending on depth - in a very hot oven 190c?
330f?
Remove and leave to cool before topping with icing.

For icing you might melt vegan margarine, sugar, cocoa, flour
and vanilla or melt vegan margarine, vegan chocolate bars and
icing sugar in a saucepan on low/med heat. If you don't like to
experiment then I can send you a more precise recipe but icing
usually turns out okay however it is made.

Pear/apple soya crumble cake


Use 4 to 6 medium sized fruits cut or sliced into small chunks.
You can use pears, apples or a mixture.

1 cup soya flour
2 cups self-raising flour
sift these together in one bowl

1 cup sugar (I use demerarra)
2/3 cup oil (I use sunflower)
1 cup soya milk
mix these together in another bowl

Add the dry mixture gradually to the sugar mixture.
Then add as much as another cup of soya milk to the batter until
the batter is stirrable but a bit stiff.
Add the fruit pieces and stir together until mixed.

Put the batter evenly into a baking dish so that it is about 3
cm deep. If you first line the dish with baking parchment the
cake will be easier to get out and the cleaning up will be
easier!

Top with crumble mixture. Here is the one I use.
1/2 cup margarine
1/2 cup sugar
mix together
1 cup flour or a mixture of flour, ground nuts, ground oatmeal,
whatever.
with a knife and fork cut the dry mixture into the margarine
mixture until it has a crumbly consistency.
Sprinkle 2 teaspoons of cinnamon into the mixture.

Sprinkle the crumble mixture over the batter in the dish.

Bake at 190c/375f/gas mark 5 for 40 minutes. Keep checking that
the top is not burning and maybe dig into the centre with a fork
to see if the batter is cooking. It will still be a bit wet but
will dry as it cools.

Rich, sweet chocolate surprise cake

This is a non-cocoa version of a brownie. You might want to try
different cakes with different flavours of chocolate - mint,
orange etc or you can make it with crushed chocolate cookies.

In a saucepan whisk 1/3 cup flour with 1 cup water. Cook gently
on medium heat while whisking. It will eventually become very
thick. Put aside to cool completely.

Gently melt 1/2 cup margarine and leave aside to cool.

In another bowl mix 2 cups sugar, 1/2 teaspoon salt, 1 teaspoon
vanilla and the melted margarine.
Mix this into the cooled flour mixture.

Mix together 2 cups flour and 1 1/2 teaspoon baking powder and
add this to everything else.

Break the chocolate into little pieces and mix into the batter.

Put the batter evenly into a baking dish so that it is about 3
cm deep. If you first line the dish with baking parchment the
cake will be easier to get out and the cleaning up will be
easier!

Bake at 180c/350f/gas mark 4 for 40 minutes.
